Tsitsibira, Corfu's own Ginger Beer recipe

Surprisingly, one of the best known Corfiot products and another trademark of the island is ginger beer (in Corfiot tsitsibira!). It was introduced by the British and became very popular with the locals. So popular that when the British left, they went on making their own tsitsibira! It’s very refreshing and has a unique taste.

Pastitsada, Corfu's traditional version of pasta

A recipe for one of Corfu's traditional dishes, Pastitsada. Pastitsada is a derivative of the Italian word "pastizzada", which is a similar Venetian dish. This recipe is for Pastitsada with rooster but keep in mind that it can also be made with chicken, capon or beef. The Corfiots are flexible when it comes to food!!!
